RS3 — retrograded starch
The interesting one for home cooks. When cooked starch is cooled, some of it recrystallises into a form that resists digestion. Cooked-and-cooled potatoes, rice and pasta all contain it — and reheating does not fully undo it.
RS4 — chemically modified
Industrially produced, used in processed foods.
The Cooking Detail That Matters for SodaTide’s Ingredient
This trips people up constantly, and it is worth being precise.
RS2 from potato is resistant when raw and largely loses that resistance when cooked. Cooking gelatinises the granules and makes them digestible. A baked potato is not a resistant starch source; raw potato starch is.

Cool that cooked potato down, though, and you get RS3 instead. Potato salad genuinely does contain resistant starch that a hot baked potato does not.

It is an argument that no capsule substitutes for food, and that anyone buying this for digestive benefit will get far more from adding beans, oats, fruit and vegetables than from anything in a 347 mg capsule.
